In the past, soup was the main dish to be served and the reason to get the family together. Nowadays, sometimes soup is served in a small bowl before the entrée.

Soups can be prepared with a variety of ingredients: meat, fish, fruits, vegetables, enhanced with herbs and seasonings. It is about simmering, over low heat, all the ingredients until all the flavour comes out and is absorbed by the liquid.
