    LEMON AND STRAWBERRY PARFAIT     

   Ingredients :
 
6 oz (180 g) cream cheese, at room temperature
¾ cups confectioners sugar
Pinch of salt
1 cup heavy cream
1 tablespoon lemon juice
1 teaspoon lemon peel
4 cups of strawberries, rinsed and drained
Mint leaves for garnishing

   Preparation:

Place cream cheese in the mixer and beat lightly until soft. Add sugar and salt and continue beating at low speed. Add heavy cream, increase speed to high and beat until cream thickens and holds medium peaks. Stir in lemon juice and peel.

Line 4 cups or glasses on the tables and arrange some strawberries in the bottom of each glass. Cover with some cream and arrange some strawberries on top. Begin and end with strawberries and alternate with the cream. Use, approximately, 1 cup strawberries and 2/3 cup cream mixture for each glass. Top with a dollop of remaining cream and garnish with mint leaves.
