    QUICK PEACH PIE     

   Ingredients :
  Crust:
2 cups processed vanilla flavored cookies
½ cup melted butter

Filling:
1 can (14 oz / 400 g) sweetened condensed milk
Juice of 4 lemons
1 can peaches in syrup, drained. Save syrup

Topping:
Syrup from peaches
1 tablespoon cornstarch

   Preparation:
Crust:
Combine processed cookies with melted butter. Press mixture on the bottom of a pie mold. Bake at preheated moderate oven to 350ºF (180ºC) for 10 minutes. Remove from the oven. Cool.

Filling:
Combine condensed milk and the lemon juice and pour into crust. Cut drained peaches into wedges and arrange on top.

Topping:
Dilute cornstarch in syrup and heat in a saucepan. Bring to a boil until mixture thickens lightly. Cool 2 minutes and pour over peaches. Refrigerate until ready to serve.

Preparation time: 50 minutes
