    GREEN SALAD WITH MOZZARELLA CROQUETTES     

   Ingredients :
 
Mixed lettuce, rinsed and torn into medium size pieces
Watercress
Spinach, rinsed and torn into medium size pieces
Mozzarella cheese, cut in 2 x 2 ½ (4 x ½ ) thick sticks
Flour, to flower mozzarella sticks
2 eggs, slightly beaten
2 teaspoons fresh oregano, finely chopped
Grated bread crumbs or panko
Oil, the necessary amount
Salt
Pepper

Dressing:
2 tablespoons balsamic vinegar
1 tablespoon red vinegar
1 tablespoon mustard
1 teaspoon brown sugar
1 garlic clove, crushed
¾ cup olive oil
Salt
Pepper

   Preparation:

Place lettuce, watercress and spinach in a salad bowl and set aside. Combine egg with fresh oregano. Place egg mixture, flour and bread crumbs in separate small bowls.

Season mozzarella sticks with salt and pepper. Dredge each stick in flour, dip in the egg mixture and cover well with bread crumbs. Freeze for 10 to 15 minutes.

Heat oil in a skillet until hot, not smoky. Remove mozzarella from the freezer and fry in batches (5 or 6 each time) until golden on all sides. Remove immediately and drain on paper towels.
Toss mozzarella sticks with salad and place some on top.

Dressing:
Place all ingredients but the oil in a bowl. Gradually, whisk in oil. Correct seasonings.

Preparation time: 45 minutes
 
        Yields: 1 cup dressing
