    QUICK TOMATO FLAN     

   Ingredients :
 
2 cups canned tomato juice
1 ¾ cup evaporated milk
8 eggs, slightly beaten
½ cup grated parmesan cheese
Salt
Pepper

   Preparation:

Whisk eggs in a bowl. Add milk, tomato juice and parmesan cheese.
Pour into a greased ovenproof pan and bake over hot water in preheated moderate oven at 350ºF (180ºC) for 30 minutes or until set. Serve.
 
        3 – 4 servings
