    WATERCRESS AND ORANGE SALAD     

   Ingredients :
 
1 1/4 lb watercress
2 oranges
4 celery stalks, thinly sliced
1 tablespoon fresh lemon juice
1 tablespoon white wine vinegar
1 tablespoon curry powder
Salt
Pepper
1 1/3 cup of extra virgin olive oil

   Preparation:

Choose carefully the most tender leaves from the watercress and arrange them in a salad bowl. Peel the oranges, eliminating all white membrane, then slice them and remove any seeds. Add to bowl along with celery.

Stir together in a small bowl the lemon juice, vinegar, curry powder, salt and pepper to taste until well mixed. Add the oil and stir util blended. Pour the dressing over the salad. Mix well and serve.
