    CHICKEN WITH CURRY SAUCE     

   Ingredients :
 
4 chicken breast fillets, (2 whole breasts) or 4 chicken thighs
3 onions, blended
2 tablespoons butter
1 tablespoon oil
1 apple, peeled, shredded thick
½ cup dry white wine
1 – 2 tablespoons ground curry
2 cups heavy cream
3 ½ oz (100 g) ham, chopped
Hard boiled egg, chopped, for serving
Green onion (green part) finely chopped
Optional: 1 teaspoon sugar
Salt
Pepper

   Preparation:

Heat butter with oil in a medium saucepan or skillet, and add blended onion. Cook onion and stir in shredded apple. Cook, stirring until tender. Add chicken and wine. Season with salt and pepper. Cover saucepan or skillet and cook until chicken is tender. Remove chicken and cut in bite size pieces. Add curry and jam to skillet and bring to a boil. Add chicken and mix to combine.

Just before serving add heavy cream and correct seasoning. If necessary add 1 teaspoon sugar and combine.
Serve with hot boiled rice and sprinkle over with chopped hard boiled egg and green onion.
