Place tuna in a bowl and flake with a fork. Combine with mayonnaise, pickles, red pepper, mustard, celery and onion. Season with salt and pepper and set aside.
Place lettuce in a bowl and season with olive oil, lemon juice, salt and pepper.
Place a bed of lettuce on dishes and arrange tuna preparation on top. Sprinkle with chopped parsley and hard boiled egg forced through a strainer.
