Crust: Combine processed cookies with melted butter. Press mixture on the bottom of a pie mold. Bake at preheated moderate oven to 350ºF (180ºC) for 10 minutes. Remove from the oven. Keep oven turned on.
Filling: While the crust is baking prepare the filling.
Whip cream cheese with condensed milk and lemon juice. Add vanilla. Pour over crust and return to oven for 8 more minutes. Cool.
Topping: Arrange ¾ of strawberries on top of the cheesecake. Blend remaining strawberries and force through a strainer. Measure strained strawberries and pour in a saucepan. Add the same amount of sugar as strawberries to pan and bring to a boil over medium heat until slightly thickened. Remove from heat and cool. Pour over cheesecake before serving.
