    SHRIMP, SQUID AND MANGO SALAD     

   Ingredients :
 
2 lb (1 k) shrimps, shelled and deveined
4 lb (2 K) squids
2 tablespoon paprika
˝ teaspoon cumin
˝ teaspoon pepper
Salt
1 cup olive oil
2 red peppers
4 cups spinach, cut julienne
2 cups lettuce, cut julienne
1 ˝ cup mango, cubed
˝ red onion, cut julienne
2 tablespoons lemon juice

   Preparation:

Clean squids. Cut squids, crosswise in 1 inch rings. Dry well and mix with shrimps.

Introduce paprika, cumin, salt and pepper into a plastic bag and mix well. Introduce, squids and shrimps, shaking so that mixture coats the seafood completely.

Heat olive oil in a medium size skillet until hot. Sauté squids and shrimps until golden, approximately 2 minutes. Set aside.

Cut sides from peppers and brush them with 1 teasspoon olive oil. Cook in skillet, turning once, until golden. Cut in thin strips.

Toss together in a salad bowl: spinach, lettuce, peppers, onions and mango. Season with lemon juice, olive oil, salt and pepper. Top with shrimps and squids.
