    WARM SALAD WITH PLUM VINAIGRETTE     

   Ingredients :
  Vinaigrette:
5 tablespoons plum marmalade
¼ cup white vinegar
1 tablespoon Dijon mustard
1 cup oil
1 tablespoon onion, finely chopped
Salt
Pepper

Salad:
10 ½ oz (300 g) spinach leaves, rinsed and dried
1 organic lettuce
1 curly endive
4 tablespoons olive oil or nut oil
¾ cup nuts, chopped and toasted
6 plums, peeled and cut in wedges

Mozzarella Cheese or Bocconcini:
12 to 16 medium size pieces of mozzarella cheese or bocconcini
Lettuce or arugula leaves, blanched and dried
Salt
Pepper
Lemon
Prosciutto in thin slices
Olive oil

   Preparation:
Vinaigrette:
Blend marmalade with vinegar and mustard. Add salt, onion and pepper. Emulsify with oil and refrigerate.

Salad:
Arrange lettuce, spinach, plums and nuts in a salad bowl. Combine with mozzarella pieces or bocconcini just before serving and drizzle vinaigrette over salad.

Mozzarella Cheese or Bocconcini:
Wrap each mozzarella piece, previously seasoned with salt and pepper, with a slice of prosciutto and a lettuce leaf. Heat oil in a skillet and lightly sauté it. Before serving microwave mozzarella pieces or bocconcini for 1 or 2 minutes until cheese is soft and slightly melts. Combine with the rest of the salad just before serving.
