Vinaigrette: Blend marmalade with vinegar and mustard. Add salt, onion and pepper. Emulsify with oil and refrigerate.
Salad: Arrange lettuce, spinach, plums and nuts in a salad bowl. Combine with mozzarella pieces or bocconcini just before serving and drizzle vinaigrette over salad.
Mozzarella Cheese or Bocconcini: Wrap each mozzarella piece, previously seasoned with salt and pepper, with a slice of prosciutto and a lettuce leaf. Heat oil in a skillet and lightly sauté it. Before serving microwave mozzarella pieces or bocconcini for 1 or 2 minutes until cheese is soft and slightly melts. Combine with the rest of the salad just before serving.
