    FAVA BEAN SALAD     

   Ingredients :
 
1 lb 2 oz (1/2 k) fresh fava beans
2 Ľ oz (60 g) bacon, chopped
1 onion, chopped
1 tomato, peeled and seeded, cut into small cubes
1 fresh yellow aji (chili), seeded and deveined, chopped
Lettuce leaves, cut into strips
Salt
Pepper
Olive oil
Optional: Tomato and finely chopped fresh yellow ají for decoration

   Preparation:

Cook fava beans in salted water until tender. Drain and reserve.
Heat 2 tablespoons olive oil in the skillet and sauté onion and bacon. Cook until onion is tender. Reserve.
Mix tomato, with fava beans and aji. Add in onion and bacon mixture. Mix well. Season to taste.
Season lettuce with salt, pepper and olive oil.
Transfer Fava Bean Salad to a serving platter or individual plates and arrange some lettuce on top. Garnish, if desired, with tomato and chopped ají.
