Whisk together lemon juice, onion, salt and pepper in a medium bowl. Gradually whisk in ¾ cup of the oil. Add mozzarella cheese.
Blanch asparagus in a large skillet with boiling water for two minutes. Drain. Transfer asparagus stalks to a baking plate and toss them with the remaining 2 tablespoons of oil.
Broil the asparagus stalks, turning, until lightly browned. Continue cooking the asparagus in moderate temperature, until tender for 20 minutes approximately.
To serve top the asparagus with the mozzarella cheese mixture and chopped parsley.
