    SEARED TUNA WITH AVOCADO AND SAUCE     

   Ingredients :
 
4 tuna fillets, 1 inch thick (2 cm)
2/3 cup parsley leaves
3 tablespoons capers, drained
1 garlic clove, samshed
3 teaspoons lemon juice
1 teaspoon anchovy paste
½ teaspoon Dijon mustard
Salt
Pepper
½ cup plus 1 tablespoon olive oil
1 large avocado, cut in ½ inch (1cm) pieces

   Preparation:

Put parsley, capers, garlic, lemon juice, anchovy paste, mustard, salt an pepper into a food processor. Pulse to chop several times. Add ½ cup olive oil gradually, while machine is running, to make a coarse puree. Leave in food processor.

Heat skillet over moderate heat. Rub tuna steaks with remaining olive oil on both sides. Sprinkle with salt and pepper. Cook for 3 minutes and cook for 3 or 4 minutes more until steak is medium rare.

Serve tuna with avocado chunks on top and drizzle with the sauce.
