JAMON DEL PAIS / Country Ham
Ingredients :
2 lb (1 k) boneless leg or pork loin
4 cups water
10 garlic cloves crushed
1 tablespoon ground dry annatto
¼ teaspoon ground cumin
¼ teaspoon dry oregano leaves
1 red onion quartered
1 tablespoon salt
¾ teaspoon pepper
Preparation:
Place all ingredients in a medium size pan.
Bring to a boil covered and continue cooking over moderate heat for an hour or until thoroughly cooked. This will depend on the size of the meat.
Remove, cool and serve in slices with onion sauce.
