    SPINACH SOUP     

   Ingredients :
 
1 lb (½ k) spinach, cleaned and finely chopped
¼ cup bacon, chopped
½ cup onion, finely chopped
½ teaspoon ground garlic
3 chicken bouillon cubes
½ cup rice
4 tablespoons grated parmesan cheese
8 cups water
Salt
Pepper
4 tablespoons grated parmesan cheese

   Preparation:

Place bacon in a skillet together with onion and garlic and cook until golden.

Add water and chicken bouillon cubes.

When water starts to boil, add rice. Reduce heat, cover pan and simmer for 15 minutes.

Add spinach, salt, pepper and cook for 5 minutes more. Add parmesan cheese and serve.
