    AVOCADO AND SHRIMP MOUSSE     

   Ingredients :
 
2 avocados, peeled, pitted, sprinkled with lemon juice to prevent oxidation
7 oz (200 g) light cream cheese, at room temperature
2 tablespoons light mayonnaise
2 ½ teaspoons unflavored gelatin
9 oz (¼ k) shrimp, shelled and deveined
4 celery stalks, chopped
2 tablespoons ketchup
Juice of 2 lemons
Salt
Pepper
2 egg whites

   Preparation:

Place avocados, cheese, mayonnaise and ketchup in the processor. If a processor is not available use a fork until a soft uniform mixture is obtained.

Soak gelatin in water and dilute it over low heat until dissolved and add to avocado mixture. Stir in celery and shrimp. Season with salt and pepper.

Beat egg whites until thick and fold into avocado mixture.

Pour into a wet mold or into individual ramekins. Chill until set.

Unmold before serving and cut in slices.

Yields approximately 12 slices
