    MANDARIN JELLY     

   Ingredients :
 
2 lb 4 oz (1 k) seedless mandarins
1 lb 10 oz (750 g) sugar
Juice of 1 lemon

   Preparation:

Rinse and remove peel from mandarins. Cut them into thin strips. Dice pulp, removing pith.

Place strips in a medium saucepan and cover them with cold water.
Bring to a boil for 5 minutes, remove from heat and strain. Repeat this procedure 2 more times.

Place in a medium size saucepan both pulp and strips with the lemon juice. Bring to a boil, at medium heat, stirring often, until mixture starts to thicken.
