    APRICOT JAM     

   Ingredients :
 
9 oz (250 g) dry apricots
9 oz (250 g) sugar

   Preparation:

Rinse and soak apricots in water until soft.

Place apricots with the soaking water in a medium saucepan and cook over medium heat until they are very soft. Remove from heat and transfer to a blender. Pour to saucepan, add sugar and stir.

Return mixture to heat and bring to a boil, stirring often, until it thickens or candy thermometer marks 220°F (106°C). Pour into sterilized jars and cover.
