    PINEAPPLE PRESERVES     

   Ingredients :
 
1 large pineapple, coarsely shredded
1 small yellow sweet potato, peeled and finely shredded
Sugar to taste, depending on the pineapple (usually, same weight as fruit)
Juice of 1 lemon

   Preparation:

Place shredded pineapple in a saucepan. Place shredded sweet potato on top. Cover saucepan, cook over medium heat and bring to a boil.
Gradually add sugar.

Start stirring over medium heat. Add more sugar if necessary.

Continue stirring until mixture slightly thickens. Add lemon juice, bring to a boil again and remove from heat. Cool and pour into sterilized containers.
