SHRIMP IN TOMATO SAUCE   
  Ingredients :
    ¼ cup butter
    1 tablespoon oil
    ½ cup onion, finely chopped
    ½ cup green onion, finely chopped
    ½ cup green pepper, seeded and deveined, finely chopped
    2 garlic cloves, crushed
    ½ cup fresh parsley leaves, finely chopped
    3 -5 tablespoons tomato paste
    ¾ cup chicken stock or chicken bouillon cube
    ½ cup evaporated milk
    1 lb (500 g) shrimp tails, cleaned and rinsed
    Salt
    Pepper
    ¼ teaspoon Tabasco

  Preparation:

Heat oil and butter in a deep skillet or saucepan and add the onion, green onion, green pepper and garlic. Cook, stirring, until they are soft and tender.

Add parsley and tomato paste, chicken bouillon, milk and Tabasco. Stir and bring to a boil for 5 minutes or until slightly thickened. Add shrimp tails and cook until they turn pink and are tender. Serve immediately over white rice.
