SWEET POTATO AND PEAR PUREE   
  Ingredients :
    6 lb 8 oz (3 k) sweet potatoes, with skin
    6 tablespoons butter, at room temperature
    5 pears, peeled, cored and cut in ½ inch (1 cm) thick slices
    1 cup pear juice
    ¼ - ½ cup sugar, depending on the sweet potato
    ½ teaspoon ground cinnamon
    Salt
    1 sliced pear for decoration

  Preparation:

Place sweet potatoes on a cookie sheet and bake them at 400ºF (200ºC) until cooked and very soft. Remove from the oven. Peel sweet potatoes, cut in pieces and transfer to a mixer. Add 4 tablespoons of butter and beat until a soft puree is obtained.

Melt remaining butter in a non stick skillet, over medium heat and add pear slices. Cook until they start getting soft (approximately 5 minutes). Add pear juice and reduce heat. Cook over low heat, stirring occasionally, until pears are very soft and cooked. More pear juice may be added if necessary. Transfer pears to a processor and process until pureed. Stir pear pure into sweet potato puree. Add with sugar and cinnamon and combine. Season with salt and pepper.

Butter an ovenproof serving dish and transfer puree to it. Heat in the oven before serving.
Garnish with remaining pear slices.
