APPLE PANCAKES WITH MACA   
  Ingredients :
    1¾ cup (1 can) evaporated milk
    1 apple, peeled, seeded and cut in pieces
    1 egg
    3 teaspoons sugar (more sugar may be added)
    2 teaspoons melted butter
    ¾ cup sifted flour
    1 teaspoon baking powder
    Cinnamon powder to taste
    6 teaspoons of Maca powder

  Preparation:

Blend the milk, apple, egg, sugar, melted butter and cinnamon until smooth. Add the flour, the Maca powder and the baking powder and mix. Heat oil in a medium size skillet and pour ½ cup mixture for each pancake. Fry each until it is brown in both sides. Serve with butterscotch or jam.
