QUICK TUNA SALAD   
  Ingredients :
    2 tuna cans (6 oz / 185 g) drained
    ¼ cup mayonnaise, approximately
    3 teaspoons sweet pickles
    ¼ dup red pepper, seeded and deveined, chopped
    2 teaspoons mustard
    ¾ cup onion, finely chopped
    2 celery stalks, chopped
    Salt
    Pepper
    Lettuce leaves, rinsed, dried and handcut in medium size pieces
    Olive oil
    Lemon juice
    Parsley, chopped
    1 hard boiled egg

  Preparation:

Place tuna in a bowl and flake with a fork. Combine with mayonnaise, pickles, red pepper, mustard, celery and onion. Season with salt and pepper and set aside.
Place lettuce in a bowl and season with olive oil, lemon juice, salt and pepper.
Place a bed of lettuce on dishes and arrange tuna preparation on top. Sprinkle with chopped parsley and hard boiled egg forced through a strainer.
