ONION AND CILANTRO SAUCE   
  Ingredients :
    2 tablespoons balsamic vinegar
    1/3 cup extra virgin olive oil
    3 teaspoons minced garlic
    1/2 cup green onion, finely chopped
    2 cups fresh cilantro leaves, finely chopped
    1 fresh yellow aji (chili) seeded, deveined and chopped
    Lime juice
    Salt
    Pepper

  Preparation:

Combine garlic, chili, green onion, lime juice and cilantro leaves in a blender or a food processor. Blend until mixture forms a smooth puree. Transfer to a small bowl and gradually stir olive oil.
Season with salt and pepper.
Serve with grilled meats and vegetables and baked potatoes.
