APPLE CAKE SOUFFLEE   
  Ingredients :
    Apples:
    2 apples (granny Smith or similar), peeled, cored and cut into very thin slices
    2 tablespoons unsalted butter
    3 tablespoons sugar
    ¼ teaspoon ground cinnamon

    Batter:
    3 eggs
    2 tablespoons unsalted butter, melted
    1 teaspoon vanilla extract
    Pinch of salt
    ½ cup flour
    2 tablespoons sugar
    Confectioners’ sugar
    Whipped cream (optional)

  Preparation:
Apples:
Melt butter in a non-stick ovenproof skillet 9-10 in.(23-25 cm). Add sliced apples, sugar and cinnamon. Cook apples until tender.

Batter:
Process or blend all batter ingredients for 1 minute until smooth and pour over apples.

Preheat oven to 425ºF (220ºC). Take skillet to oven and bake pancake for approximately 20 minutes or until pancake is puffed and golden brown. Do not open oven door until cooking period has ended or pancake will collapse.

Serve immediately. Dust with confectioners sugar and serve.
Optional: Serve with vanilla ice cream.
