ROYAL ICING   
  Ingredients :
    4 ½ cups confectioners´ sugar
    3 egg whites
    ½ teaspoon cream of tartar
    Vegetable food coloring

  Preparation:

Whip all ingredients at low speed until combined. Increase speed and whip until mixture thickens until de icing forms thick soft picks. Test the icing by piping a small amount through a decorative tip. If icing is difficult to pipe out, it needs a few drops of water or if icing seems runny confectioner’s sugar has to be added.
Divide the icing among clean small bowls, one for each color to be used. Introduce toothpicks into the food colors and transfer small amounts to the icing and stir with a spoon. Repeat until the desired color is achieved.
Keep containers sealed when not in use.
 
        Yields: Approximately 3 cups
