CARROT AND MANGO SALAD THAI STYLE   
  Ingredients :
    4 tablespoons orange juice
    1 ½ tablespoon lemon juice
    2 teaspoons honey
    1 teaspoon orange flower water
    1 ½ teaspoons sesame oil
    2 – 3 sesame seeds, toasted

    Dressing:
    6 medium size carrots, coarsely shredded
    2 medium size mangoes, pitted and sliced thinly
    10 oz (300 g) tofu, cut into ½ in (1 cm) dice
    2 tablespoons chives, chopped

  Preparation:

Mix carrot, mango and tofu in a bowl.

Dressing:
Combine dressing ingredients in a jar. Cover jar and shake until mixed. Pour dressing over the salad and toss well to mix. Before serving toss salad lightly and sprinkle with chives.
Serve immediately.
