ROASTED POTATOES   
  Ingredients :
    1 lb (500 g ) potatoes, rinsed, with skin, cut into large chunks
    2 – 3 tablespoons olive oil
    Salt
    Pepper

  Preparation:

Place potatoes in a large bowl and toss with 2 tablespoons oil, salt and pepper.
Heat a large skillet over medium heat with remaining oil and add potatoes. Cook potatoes, stirring occasionally until they start to brown. This will take approximately 5 to 8 minutes.
Remove skillet from heat and transfer to the oven, previously preheated to 450°F/230°C.
Roast potatoes, stirring occasionally, until browned and crisp, approximately 25 – 30 minutes.
Serve with meats or fish.
