YANUQ´S BREAD PUDDING
Ingredients :
3 eggs, separated
1 ½ cup milk
½ teaspoon vanilla extract
18 slices of bread, aprox, without crusts
1 ¼ oz (50 g) soft butter
10 ½ oz (300 g) peach or strawberry jam
1 teaspoon white sugar
Preparation:
Place egg yolks in a large bowl together with the milk and vanilla. Whisk lightly until combined. Butter an ovenproof serving mold (9x12x2 in / 20x30x5 cm).
Butter one side of bread slices and place 1 layer on the bottom of mold (buttered side up). Pour 5 tablespoons of egg and milk mixture over bread. Spread half of jam evenly on top. Cover with another layer of bread slices (buttered on one side), and continue with the milk and jam. Finish pudding with a layer of bread and butter. Pour remaining milk mixture over and prick bread with a fork so milk goes through bread.
Bake in preheated oven to 350°F (180°C) for 30 minutes.
Remove from the oven.
Whip egg whites (as for meringue) until stiff with sugar. Place on top of pudding and broil in oven for a few minutes until lightly browned.
Serve warm or at room temperature.
