RAISIN AND OATMEL SQUARES   
  Ingredients :
    4 cups oats
    2 cups all purpose flour
    ½ cup brown sugar
    1 cup pecans, chopped
    1 teaspoon baking soda
    1 teaspoon salt
    1 ½ cup unsalted butter, melted
    2 teaspoons vanilla extract
    2 cups raisins
    1 teaspoon lemon zest
    ½ teaspoon ground cinnamon
    Nonstick cooking spray

  Preparation:

In a large bowl combine oats, flour, sugar, pecans, baking soda and salt.
Add melted butter and vanilla and stir until thoroughly mixed. Set aside.
Combine raisins, ½ cup water, lemon zest and ground cinnamon in a small saucepan and bring to a boil over medium heat. Immediately reduce to low heat and continue cooking for 2 minutes more. Cool. Transfer mixture to a food processor and process until almost smooth. Drain through a fine strainer if mixture is very liquid.
Spray non stick cooking spray a 9x13 in / 18x26 cm baking dish. Spread half of the oat mixture in the bottom and press with fingers to form an even layer. Spread raisin mixture on top and cover with remaining oat mixture.
Bake in a preheated oven to 350°F (180°C) for 35 - 45 minutes or until golden brown. Remove from the oven and let cool completely.
Cut into 2 inch (4 cm) squares.
Keep in an airtight container.
