PEAR AND CACTUS PEAR SALAD   
  Ingredients :
    4 cactus pears, peeled and cut in wedges or chopped
    2 pears, peeled, seeded and cut in wedges or chopped
    Lettuce leaves
    ˝ cup olive oil, approximately
    1 tablespoon balsamic vinegar
    Juice of 1 lime
    1 fresh yellow ají (chili), seeded and deveined, chopped
    ˝ cup nuts or pecans, toasted and chopped
    Salt

  Preparation:

Combine cactus pears and pears with aji or chili in a bowl. Prepare vinaigrette by whisking balsamic vinegar with salt and lime juice.
Gradually whisk in olive oil.
To serve, arrange a layer of lettuce leaves and place salad on top. Drizzle with prepared vinaigrette.
Sprinkle with nuts or pecans.
