WARM CHICKEN CEVICHE   
  Ingredients :
    ½ chicken or 2 chicken breasts, cut into pieces
    Oil
    Salt
    Pepper
    Cumin
    1 tablespoon garlic, minced
    2 tablespoons fresh yellow aji paste or puree
    Juice of 1 or 2 limes
    1 onion cut into thin julienne
    1 tablespoon cilantro leaves, chopped

  Preparation:

Heat oil with salt, pepper, cumin, garlic, and fresh yellow aji paste. Cook well and add raw chicken pieces. Add ¼ cup water and cook.
When chicken is tender add onion, lime juice and chopped cilantro.
Continue cooking until onion is crisp tender. Remove from heat and serve.
Serve with cooked potatoes and white rice.
