MANGO CEVICHE   
  Ingredients :
    2 medium size mangoes (not very soft), peeled, pitted and cut into cubes
    1 red onion, cut into thin julienne
    1/3 cup cilantro leaves, finely chopped
    Salt
    Pepper
    2 fresh yellow aji, seeded and deveined, cut into thin strips
    1 aji limo, seeded and deveined, cut into thin strips
    Juice of 4 – 5 limes
    Lettuce leaves for serving
    3 -4 tablespoons of oil

  Preparation:

Place ¼ of the diced mango in the blender together with lime juice and pepper. Blend until creamy. Season with salt, aji and chopped cilantro.
Combine this cream with the diced mango in a bowl. Add onion and mix. Refrigerate.
Place lettuce leaves on dishes or a martini glass, season with salt and drizzle oil. Arrange mango ceviche on top of lettuce. Sprinkle some finely chopped aji limo and decorate with a cilantro sprig.
