UPSIDE DOWN BANANA CAKE   
  Ingredients :
    Banana Caramel Mix:
    4 tablespoons melted butter
    ½ cup brown sugar
    ½ cup chopped pecans
    4 – 5 bananas sliced

    Banana Cake:
    1 cup mashed banana
    1 teaspoon lemon juice
    3 tablespoons milk
    2 cups flour
    1 teaspoon baking powder
    ½ teaspoon salt
    ½ teaspoon baking soda
    ½ cup butter
    1 cup sugar
    2 eggs

  Preparation:
Banana Caramel Mix:
Grease and flour a 9 in (23 cm) round cake pan.
Combine melted butter with brown sugar. Spread evenly on the bottom of the cake pan. Sprinkle chopped pecans oven and arrange banana slices on top. Reserve.

Banana Cake:
Blend bananas, milk and lemon juice.
Whip butter and add sugar. Beat until creamy and smooth. Add eggs one at a time, beating well after each addition.
Sift flour with baking powder, salt and baking soda, lower speed, and add to butter and eggs alternating with banana mixture.
Pour into prepared cake pan.
Bake in oven 350°F (180°) for 45 minutes or until cake tester comes out clean.
Remove from oven and invert onto a round serving platter.
Serve warm with ice cream.
