CUCUMBER, TOMATO AND GOAT CHEESE GREEK SALAD   
  Ingredients :
    1 cucumber, rinsed, peel and cut in thin slices
    1 green pepper, seeded, cut julienne style
    8 – 10 italian tomatoes, seeded, cut in thin slices
    1 onion, cut in thin slices
    ¾ cup, whole black olives, pitted
    1 cup, goat cheese, cubed
    4 tablespoons, extra virgin olive oil
    1 tablespoon red wine vinegar
    Salt
    Black pepper
    2 teaspoons, dried orégano (can be replaced for mint leaves)
    Bread croutons, fried in olive oil and garlic (optional)

  Preparation:

Combine cucumber, tomatoes, onion, olives and goat cheese.

Prepare a vinaigrette with olive oil, vinegar, oregano, salt and pepper.

Combine with vegetables and let stand for 30 minutes before serving.

Sprinkle bread croutons if desired.
