BOILED FRUIT CAKE   
  Ingredients :
    3 oz (80 g) dry apricots, chopped
    3 oz (80 g) dry figs, chopped
    3 oz (80 g) dry peaches or pears, chopped
    1 ¾ oz (50 g) mixed candied fruit
    3 oz (80 g) pecans or nuts, chopped
    ½ cup seedless black raisins
    ½ cup seedless golden raisins
    2 cups milk
    4 ½ oz (120 g) butter, diced
    1 cup sugar
    1 teaspoon baking soda
    1 cup flour
    1 cup self rising flour
    ½ teaspoon ground cinnamon
    ¼ teaspoon ground ginger
    ¼ teaspoon ground clove
    2 eggs
    Confectioner’s sugar

  Preparation:

Combine apricots, figs, pears, candied fruit and raisins in a saucepan. Add butter, milk and sugar and mix well. Bring to a boil.
Add baking soda, mix and boil for 3 minutes. Remove from heat and cool. Once mixture is cool, add flours, cinnamon, ground ginger and clove. Mix well. Beat well eggs and fold into mixture.

Line bottom of a round or rectangular pan with parchment paper.
Butter and flour pan. Pour preparation into pan and bake in preheated oven to 350°F (180°C) for 1 ½ - 2 hours or until tester comes out clean. Remove from the oven and cool on a rack for 30 minutes. Invert on a serving dish. Dust over with confectioners’ sugar.
