SHRIMP, TOMATO AND FAVA BEANS SALAD   
  Ingredients :
    30 shrimp tails, trimmed and cooked
    2 – 3 tomatoes, peeled, seeded and diced
    1 cup cooked corn kernels
    7 oz (200 g) fresh white cheese (feta), diced
    ¾ cup fava beans, cooked
    ½ cup black olives, pitted (optional)
    1 medium size onion, chopped
    2 fresh yellow aji, seeded and deveined, chopped
    2 white potatoes, cooked, peeled and diced
    Salt
    Pepper
    Chopped parsley
    ½ cup extra virgin olive oil
    ¼ cup white vinegar

  Preparation:

Combine all ingredients, except the parsley, the oil and vinegar in a bowl. Season with salt and pepper. Add in oil, vinegar and parsley and mix thoroughly. Correct seasoning.
