TUNA AND LIMA BEAN SALAD   
  Ingredients :
    1 garlic clove, minced
    2 - 3 tablespoons lemon juice
    1/3 cup extra virgin olive oil, approximately
    Salt
    2 cups cooked lima beans or any white bean (drained canned beans, may be used)
    1 seeded cucumber, quartered lengthwise in four and then crosswise into thick slices
    3 - 4 medium size tomatoes, peeled and cut into 1 in. (2 cm) pieces
    1 ½ cup fresh parsley leaves
    2 cans tuna packed in oil, drained
    Salt
    Pepper

  Preparation:

Combine minced garlic and salt and mash to a paste. Whisk together garlic pasta, lemon juice, salt and pepper in a small bowl and add oil, whisking until combined well. Set aside and stand at room temperature.

Toss lima beans with cucumber, tomatoes and parsley in a salad bowl with half of the dressing and arrange medium size pieces of tuna on top. Drizzle remaining dressing over.

Optional: Avocado and 2 hard cooked eggs cut into medium size pieces may be added to salad.
