LOIN OF BEEF IN CILANTRO SAUCE   
  Ingredients :
    3lb 5 oz (1 ½ k) loin of beef, trimmed and cut into medium size pieces
    3 tablespoons oil
    2 cups onion, finely chopped
    4 garlic cloves, minced
    3 tablespoons squash, shredded
    1 ½ teaspoons paprika
    1 ½ teaspoons dry oregano
    2 ½ teaspoons fresh yellow aji, blended
    1 teaspoon sundried red aji paste
    1 ½ cups squash, diced
    1 cup beer
    1 cup beef stock, approximately
    2 red peppers, baked, peeled and chopped
    1 ¼ cups cilantro leaves, chopped
    1 ½ cups green peas, cooked
    Salt
    Pepper

  Preparation:

Heat 1 tablespoon oil in a large skillet until very hot. Sear beef pieces until golden. Season and remove beef from skillet together with cooking juices. Set aside.

Heat more oil in the same skillet or saucepan and sauté onion until tender. Add in garlic, shredded squash, paprika, and season with salt, pepper and oregano. Mix well and add blended yellow aji, red aji paste and chopped squash. Pour in beer and bring to a boil for approximately 10 minutes.

Add beef stock and cilantro and boil for 10 minutes more.

Return beef to saucepan or skillet and stir in red pepper and green peas. Cook 10 minutes and correct seasoning.
Serve with white cooked rice.
