COCKTAIL POTATOES WITH CHEESE SAUCE   
  Ingredients :
    Potatoes
    2 lb, 4 oz (1 k) cocktail potatoes, with skin
    2 tablespoons vegetable oil for the potatoes
    Coarse salt

    Sauce:
    2 tablespoons butter
    2 tablespoons olive oil, for the sauce
    1 cup cream cheese (8 oz / 220 g)
    1 cup milk
    4 tablespoons grated Parmesan cheese
    ¼ cup creamy aji sauce or to taste
    ¼ cup chopped parsley
    ½ teaspoon fresh thyme
    Salt

  Preparation:
Potatoes
Place cocktail potatoes in a baking pan and mix with olive oil and coarse salt. Bake in preheated oven to 350°F (180°C) until soft. If you prefer, you can cook them in salted boiling water instead of baking them.

Sauce:
Melt butter and oil over hot water. Stir in cream cheese and milk. Add creamy aji sauce to taste, grated Parmesan cheese and chopped thyme and parsley. Correct seasoning. Place cooked potatoes on a serving dish and serve with cheese sauce.
