RICE WITH SPINACH   
  Ingredients :
    ¾ lb (350 g) spinach, cooked and drained
    2 tablespoons oil
    2 teaspoons garlic, minced
    ¼ cup chopped parsley
    2 cups rice
    3 cups chicken stock
    8 tablespoons parmesan cheese, grated
    1 small onion, chopped
    7 oz (200 g) mushrooms, sliced
    ½ cup dried tomatoes chopped
    Salt
    Pepper

  Preparation:

Pour oil in large pan and sauté onion, garlic and parsley. Mix in chopped spinach and mushrooms and season with salt and pepper.

Add rice, chicken stock and bring to a boil. Cook rice for 20 minute or until rice is just done. Add cheese and dried tomatoes. Mix well.

Serve with meats.
