BEETS IN SOUR CREAM   
  Ingredients :
    2 cups cooked beets, drained and cubed
    ½ cup water in which the beets were cooked
    2 tablespoons butter
    2 tablespoons flour
    ¼ cup vinegar
    ¼ cup heavy cream
    1 teaspoon sugar
    Dash of nutmeg
    Salt
    Pepper

  Preparation:

Melt butter in saucepan and blend in flour. While stirring add water in which beets were cooked, vinegar, cream, sugar, salt and pepper. Cook until smooth, stirring constantly and add cooked beets.

Heat thoroughly and serve.
