SWEET POTATO PUREE WITH ORANGE JUICE AND MARSHMALLOWS   
  Ingredients :
    4 ½ lb (2 k) yellow sweet potatoes, cooked and mashed to form a puree
    Orange Juice
    2 – 3 tablespoons soft butter
    Sugar to taste
    Salt
    Marshmallows

  Preparation:

Transfer sweet potato puree to the mixer. Beat puree and add sugar and butter. Continue beating until creamy. Add gradually orange juice until a soft puree is obtained. Season to taste. Transfer puree to a greased ovenproof serving dish. Arrange marshmallows on top.

Bake in preheated oven at 350°F (180°C) until puree is heated through and marshmallows are soft and golden.
