STUFFED TOMATOES   
  Ingredients :
    6 medium size tomatoes
    1 cup spinach, rinsed, drained and chopped
    2 tablespoons oil
    ˝ medium size onion, finely chopped
    2 garlic cloves, finely chopped
    ˝ cup fresh white cheese, grated
    1 cup mushrooms, chopped
    4 tablespoons chopped basil
    Salt
    Pepper
    Chopped lettuce for serving
    Parsley leaves, finely chopped.

  Preparation:

Rinse 4 tomatoes and cut upper part. Empty tomatoes carefully with a spoon and season with salt and pepper.Place tomatoes upside down on a rack for 1 hour to drain.

Peel remaining 2 tomatoes, remove seeds and diceHeat oil in a skillet and sauté onion and garlic. Add chopped tomatoes and spinach and cook for a 2 -3 minutes. Add cheese, mushrooms and basil. Combine and cook for 3 – 4 minutes more. Fill tomatoes with mixture and serve.Place tomatoes over lettuce and sprinkle chopped parsley.
