MEAT STUFFED ZUCCHINI   
  Ingredients :
    4 zucchini, peeled and halved lengthwise
    7 oz (200g) ground meat, no fat
    1 medium size onion, grated
    2 garlic cloves, finely chopped
    2 cups tomato purée (processed chopped tomato)
    ½ low fat chicken broth
    Salt
    Pepper

  Preparation:

Cook zucchini in salted water for 10 minutes. Remove and drain.

Pour chicken broth in a medium size pan and bring to a boil. Add onions and garlic and cook until tender. Add meat and stir until cooked. Season.

Heat tomato purée and season to taste.

Stuff zucchini with meat sauce and cover with tomato pure. Sprinkle parsley and serve.
