BANANA LOAF CAKE   
  Ingredients :
    1 cup mashed banana
    1 teaspoon lemon juice
    3 tablespoons milk
    2 cups flour
    1 teaspoon baking powder
    ½ teaspoon salt
    ½ teaspoon baking soda
    ½ cup butter
    1 cup sugar
    2 eggs
    ½ cup chopped nuts

  Preparation:

Blend bananas, milk and lemon juice.

Whip butter and add sugar. Beat until creamy and smooth. Add eggs one at a time, beating well after each addition.

Sift flour with baking powder, salt and baking soda, lower speed, and add to butter and eggs alternating with banana mixture.

Add chopped nuts. Pour into a greased and floured loaf pan.

Bake in oven 350 °F (180 °C) for 45 minutes or until cake tester comes out clean.

Remove from oven and cool on rack. Unmold and dust confectioners sugar on top.
