ZUCCHINI BREAD   
  Ingredients :
    3 cups flour
    1 ½ sugar
    2 teaspoons cinnamon
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon baking powder
    3 eggs
    3 cups zucchini, shredded
    1 ½ cup black raisins
    1 ½ cup golden raisins
    1 cup chopped nuts
    2 teaspoons vanilla
    1 cup oil

    Glaze:
    1 ½ confectioners sugar
    1 teaspoon lemon rind
    3 tablespoons lemon juice
    1 tablespoon oil

  Preparation:

In a large bowl mix flour, sugar, cinnamon, salt, baking soda, baking powder, shredded zucchini, raisins and nuts.

Beat eggs with vanilla and oil. Fold in flour mixture and mix thoroughly.

Pour batter into 2 greased and floured loaf pans, lined with parchment paper on the bottom, to 2/3 of pan capacity.

Bake in preheated moderate oven 350 °F (180 °C) for 1 hour and 20 minutes.

Glaze:
In a medium size bowl, combine all ingredients and beat well. Glaze cake with the mixture. If desired, sprinkle candied fruit on top.
