SUGAR AND CINNAMON COOKIES   
  Ingredients :
    1 ¼ cup flour
    ¼ teaspoon baking soda
    Pinch of salt
    ½ cup unsalted butter
    ¾ cups granulated sugar
    ½ cup brown sugar
    1 egg
    1 teaspoon vanilla extract
    2 ½ tablespoon ground cinnamon

  Preparation:

Sift together flour, baking soda and salt.

Beat butter, ¼ cup granulated sugar and brown sugar until mixed. Add egg and vanilla and continue beating until batter is smooth and has pale color. Reduce speed and add sifted ingredients. Divide dough in thirds and shape into 3 6 inch (15 cm) logs. Wrap in plastic and refrigerate until firm.

Combine remaining sugar (1/2 cup) with cinnamon and spread on a flat surface. Remove logs from the refrigerator and unwrap. Roll logs in the cinnamon sugar mixture until they are coated. Wrap again and freeze or refrigerate until firm.

Unwrap cookie logs and slice ¼ inch (½ cm) thick. Arrange cookies on a cookie sheet leaving 1 inch (2 cm) between them.

Bake in preheated oven to 350°F (180°C) for 18 to 20 minutes or until lightly golden.

Remove from oven and transfer cookies to a rack to cool.Keep in an airtight container.
