CHEESE FONDUE   
  Ingredients :
    1 lb (450 g) Gruyere cheese, coarsely grated
    1 lb (450 g) Gouda cheese, coarsely grated
    2 ¼ cup dry white wine
    3 whole garlic cloves
    Salt
    Fresh pepper
    Nutmeg
    French baguette bread, cut in medium size pieces
    1 tablespoon Cornstarch
    3 tablespoons Pisco or Kirsch

  Preparation:

Combine cheeses and rest of ingredients. Place in a medium size saucepan together with the whole garlic cloves.

Bring to a boil and lower heat, stirring frequently, until cheeses melt . Correct seasoning and remove garlic cloves.

Dilute cornstarch in pisco or kirsh, and add it to the cheese cream. Boil, while stirring, for one minute.

Pour fondue into a fondue casserole. Serve with pieces of baguette bread.
